Cashew nut cheese which is dairy free

Ah Cheese. The delicious item of food that many people have had to give up and go without.

As a child we had the classic macaroni and cheese, which is why i have created a great substitute to give you back some of that comfort feeling.

There are many different meals and snacks to use this recipe with.

  • cheese sauce for pasta and soups recipes as i used in the Creamy Broccoli Soup Cashew Nut Recipe Dairy Free.
  • cheesy dip for nacho’s or vegetables. Spicy or not.
  • cheesy sauce to top taco’s, potatoes, french fries, sweet potato.
  • harden the cheese by putting it in the fridge for 24 hours.

Creamy Dairy Free Cheese Recipe (Cashew nut based)

This is an easy and quick Cashew based cheese recipe that is versatile for any dish, sauce or dip.

Ingredients
  

  • 1 cup Cashews plain, not roasted
  • 4 tbsp Nutritional Yeast
  • 1 tbsp Miso paste
  • 1-2 tbsp lemon juice fresh
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp mustard powder
  • 1/8 tsp nutmeg powder
  • 3/4 cup alternative milk unsweetened like almond, coconut or cashew.

Instructions
 

  • Boil a kettle with approx 2 cups water or boil 2 cups water in a pot stove top.
  • Place the cashews in a glass mixing bowl, and once the water in the kettle has come to a boil, pour the hot water over the cashews so they are all covered. Or add the cashews to the boiling water on stove top then turn off stove set aside. Then set timer for 30 minutes.
  • Drain cashews and rinse.
  • Add drained cashews to a blender or food processor with the miso paste, nutritional yeast, lemon juice, garlic powder, onion powder, mustard powder, nutmeg and alternative milk.
  • Blend well until creamy. Stopping once in a while to scrape down the sides with a spatula.
  • Your creamy cheese sauce is ready to serve.
  • Store in the fridge, in a container or mason jar for up to 3 days.
