Roasted Sweet Potato Bites and tomato Garlic oil Dip recipe vegan gf

This is one of my favourite recipes that I make as a snack. Delicious and is super easy to make!

Only 5 ingredients and into the oven to bake for 30 minutes. 1 large baking pan, and 1 small rectangular bakers dish ceramic or stoneware.

  • 2 large sweet potatoes cut into bite sizes -boil for 15 minutes – drain
  • Allspice and a little salt and pepper.
  • 8 cloves garlic
  • 1 carton of cherry tomatoes
  • Sunflower Oil

This recipe can be an appetizer, and side dish.

Texture of the roasted sweet potato bites is slightly crunchy, with a soft center. Dip the bite into the tomato garlic oil gives it a taste of creamy roasted tomato, with a hint of salty smooth garlic. The taste just melts right together like they were meant to be.

If you have any remaining Tomato Garlic oil, simply put it in a a glass jar and store in the fridge. Use up before 2 weeks. Add to your breakfast eggs or tofu eggs in the morning.
