Creamy Nacho Cheese Dip Recipe Dairy Free

A no fuss dip, that is a must try.

Its taste is so creamy, and full of the flavour of cheddar. But All gluten and dairy free.

Serve with Organic Tortillas Chips unsalted, Gluten Free Crackers, and cut up Vegetables.

You can make it to your heat preference. From this recipe amounts, I made 3 small bowls. One was mild, another medium, and the last one is spicy.

PC pickled jalapenos

By keeping the tortillas chips unsalted, you will lower your sodium intake. Plus I found that there was enough flavours, so I never added more salt.

Equipment

  • small glass bowl
  • Kettle to boil water
  • 1 cup, 1/4 cup or 3/4 cup
  • 1/8 tsp, 1/4 tsp, 1/2 tsp
  • Food Processor or Blender

Ingredients

  • 3/4 cup Any Alternative milk unsweetened - I used Oat Milk for more creaminess
  • 3/4 cup Nutritional Yeast
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Smoked Paprika
  • 1/2 tsp Himalayan or ground sea salt

Prepare Cashews:

  • 1 cup Raw Cashews unsalted Organic if possible
  • 1 Kettle - boil water to pour over cashews

Optional: Medium to Spicy Heat

  • 1 Jar pickled sliced Jalapeños
  • 1/4 tsp Red Pepper Flakes

Side of:

  • Bowls Cut up vegetables, Tortilla chips unsalted, and Gluten free Crackers.

Instructions

Prepare the Cashews

  • Small glass bowl, add in the cashews, and add the boiling water until they are covered. Let soak for 30 minutes.
  • After 30 minutes, drain and rinse the cashews.

Food Processor or Blender - Mild Heat

  • Add the Oat Milk or alternative milk of choice to the food processor or blender. Then add in the drained cashews, Onion Powder, Garlic Powder, Nutritional Yeast, Paprika, and Salt.
Pulse a few times to chop up the cashews, then on full for 15 seconds, scrape down the sides. Turn on full for 15 seconds, scrape down the sides, and repeat until the mixture is smooth and creamy.
If you want to leave it as mild, then enjoy! Or place in the fridge covered until ready.
I split the container into 3 bowls to have mild, medium and spicy.

Optional Medium Heat

  • Medium heat, chop up 3 slices of the Jalapeños, 1/8 tsp red pepper flakes, and add to one of the 3 bowls. Mix well. Top with 1 slice of Jalapeños if you want to let everyone know its Medium.

Optional Spicy Heat

  • Spicy heat, chop up 8 slices of the Jalapeños and 1/4 tsp red pepper flakes to one of the 3 bowls. Mix well. Taste test, if you want more heat then add a few more chopped up slices of Jalapeños. Top with 1 slice of Jalapeños and a sprinkle of a few red pepper flakes so everyone knows it's Spicy!
  • Serve with cut up vegetables, Tortilla Chips unsalted, and gluten free crackers.

Notes

If  you find your dip too thick, then simply add 1-2  tbsp of alternative milk.
